Biking in Umbria, Italy

Hi - this is my first post - bear with me. Looking for either book, maps, or people who know good day rides in Umbria, Italy. Near towns are Todi, Assisi, Perugia, Spoleto.  30-80 miles good. Climbing good.  Good Italian eating good as well!  thanks for any and all suggestions.

Never toured or biked there but have been there as a normal tourist to Perugia, I don't think climbing or long rides with good food will pose much of a problem to find!
