If you are looking at new bikes then then take a look at the Surly Long Haul Trucker built around 26" wheels, here's the link: http://surlybikes.com/bikes/long_haul_trucker .  You might find one used but that would be extremely good luck.

I've been intrigued by this web site cycling.waymarkedtrails.org.  Not a lot of routes mapped in Greece though.  Looks like Eurovelo 8 goes down the west coast.  In some cases you can download GPX routes from the Waymarked Trails web site.  I then feed the GPX file into www.gpsvisualizer.com to generate a route profile.  Let me know if you want any help with these steps.

If you want to plan your own route you can lay it out on Google Maps then copy a link to that map and run it through GPS Visualizer's profile utility by pasting the link in the data entry field labeled "Or provide the URL of data on the Web:".  This is how I planned our route through Europe last spring.

My wife and I traveled Europe last year with our bikes on Iceland Air.  $52/bike/direction plus they had the lowest fair.  They treated our boxed bikes well.   It doesn't look like they fly out of Chicago or into Dublin but you may be flexible.

How about taking the Great Parks route north from Missoula to Jasper then heading west on 16?  It would be a shame to miss the Icefield Parkway.

This may be doable in the Colorado Rockies but by the time you have to cross the Yellowstone plateau you may be out of luck.  Have you thought about jumping on the Western Express route in Pueblo then heading up the Pacific Coast route to Astoria?  Probably close to the same milage and duration but warmer and less prone to snow...at least until you get to the Sierra Nevadas.  Remember the Donner Party. :-\
