I like your bike trip. I rode the Florida Keys from North Key Largo to Key West in May this year. There are bike trails for a lot of the way with the 7 Mile Bridge just having a shoulder. I didn't ride over it this year but in 2017 I did. I didn't have any trouble on the bridge. The shoulder is about 6 ft. wide and traffic gave room. Will your e-bike have special electric charging requirements? I think anyplace with a 120V plugs will be able to charge the battery. As a backup you could carry a small solar charger.

Check the Tour de Rouge route maps. The TDR goes from Houston to New Orleans.

You might check the East Coast Greenway website. This section is part of the greenway. I rode it in May 2017 and there were several places south of Marathon where I rode on the highway. Of course, the 7 mile bridge is on the shoulder which isn't too narrow.

The Bike to the Beach MS150 has not happened for several years. I suspect the reason was sponsorship changes by HEB. Looking at this Strava.com heat map may help you see where other cyclists ride.

You could follow the MS150 route. They don't camp out but the roads would be the same.

Streamline Cycles rents a wide variety of bicycles. Maybe they have what you need. Also some people buy a bike on Craigslist, use it and then sell it when they are finished.
