General Discussion / Why SPD pedals?

It seems to me that many bike tourist use SPD pedals? What are the pros and cons for using the SPD vs regular road pedals. Thanks.

General Discussion / Touring

I have not toured but want to get input from you who have about the feasibility of starting a fully loaded tour of the southern tier, from west to east, on Dec 1. Even though I have given a little thought to this, I do not like cold weather that well. I may decide to drop the idea, depending on what you may have to say about the weather that time of the year.
I am going to list my concerns because I am confident that the experience is out there to help me.
1. I will be traveling on a '05 Rans Stratus. It has respectible components.
2. Trailer or racks?
3. Is it a sign of insanity to be thinking of camping in the south that time of the year?
4. Cold weather gear.
5. Tent type.
6. Anyother information.
I have looked into the above but no decisions.
Arkansas is my home state.
