I have Gravel Kings in 43 on my gravel bike and 2.1" on my Fargo (bikepacking) bike. In my recent experience, they're less puncture resistant than other tires...  as I convert my Fargo for a road tour, I've been riding the Pirelli Cinturato H tire in 50mm on the road... great flat resistance and rolls well. They come in 700x35...

+1 on the Therm-a-Rest Vesper. I have the 32 and the 20 degree one.. started with the 32 and then when doing a winter trip- picked up the 20 degree because I really like the 32 and just wanted a warmer option.

They pack really small and light.. and with an insulated pad... do a nice job with temperature.
