Yes the thermarest does not need a stuff sack as it is waterproof.  The pad is air tight and thus waterproof.  OR and Sea to Summit both make lightweight silnylon stuff sack with a roll top closure.  If rolled as designed it will be pretty much waterproof.  There are multiple sizes so you should not have a problem finding one that will hold your sleeping bag.

I have a few items from Jeff at Carousel Design Works.  The craftsmanship is excellent.  I have not seen anything from Epic Designs personally.  Jeff was a really great guy to work with. I would call both and talk about what you are looking for.  See which one can deliver the product on the timeline you need.  Hope this helps.

I made something like this awhile back.  I wasn't too in to the molasses taste.  I have since moved to use just pure honey.  I look to other sources for electrolytes.  If you have allergies try to find local honey rather than something from some other region of the country.  Local honey has antibodies to help with allergies from local pollens.

I am planning my first tour this summer.  6-7 days along the OR and CA coast.  I have both MTB SPD shoes/pedals plus road shoes and pedals with Looks style cleats.  I really like the idea of using my MTB set up for the comfort and ease of walking around.  That said the fit of my bike is very important as I have found myself to be very biomechanically sensitive.  A centimeter off and I suffer on long rides.  My bike is perfectly set up for me and changing something as important as shoes, pedals, and cleats is not worth it.  I will be sticking with my road shoes and cleat covers.  If I wasn't so finicky I would be using an SPD set up with MTB shoes for sure.
