Gear Talk / southern tier check list?

i'm planning a self-contained, southern tier tour this spring.  can someone please direct me to a place where i can obtain a checklist for the important items i should carry (like how many spare tires, what tool(s), emergency food or first aid, etc)?  thanks.

i'm quite new at this whole cycling thing, but intend to tour across the U.S.  i have a fuji cyclocross comp with the stock fuji ultralite racing saddle.  i'm interested to hear some feedback about keeping the stock seat or upgrading to a one designed for touring.  if upgrading, what are some recommendations that won't break my bank ($75 or under)?

Routes / food and water on the southern tier

i'm planning on riding a self-contained tour of the southern tier starting march 1 in san diego.  first question, how much water capacity should i be carrying to stay hydrated and cook with?  second, i intend to camp and cook for myself...any suggestion on meals that are portable and reasonably tasty that i could cook at the end of the day?  any thoughts on some good mid-day meals would also be appreciated.  thanks for your help.
