South Atlantic / Raleigh, NC to Venice FL

I am planning a solo ride from Raleigh to Venice, with stops in Calabash and Charleston in early to mid June 2021. I currently live in Germany, and may use this opportunity to also buy a new bike. I could really use suggestions for a reputable bike shop in Raleigh, some logistical help for lodging along the route, and some thoughts about the part between St Augustine and Venice. I have ordered the maps, but it will be weeks before they arrive in Germany, and I'm trying to see if this would be worth it.
I am thinking an average of 70ish miles per day, and would like to avoid roads like route 17 through Myrtle Beach. I'm fine with some climbing, but the routes look pretty flat.
I realize there are lots of questions in this post, an would greatly appreciate any input from you seasoned cyclists, who are familiar with these routes.
