I have had good luck with Brooks Cambium C-17.
 Saddle choice is very personal.   Only your butt will tell you the answer.  I've been through many saddles/styles.  I have used the Brooks B-17 leather saddles with good results as well.

Velo Orange Fender set brand new. For 26" wheels. Stainless steel. Fenders are 60mm wide and can fit tires up to 52mm wide. all hardware included. Also come with mud flaps from Velo Orange in Honey color.
Brand new never used,   I just found a different fender set I liked better.

(3) You'll have to get used to the barcon shifters.  It's a new way of shifting.  You'll adapt, but changing from another bike to barcons will force you to think for 5 minutes each ride.

It's really not that big of a deal going from my 520 to any other bike.....more like half a second if that---5 minutes---Yikes.

I love my 520. It is the smoothest riding bike I have ever owned

Ther are bear boxes at the public camping areas throughout Yellowstone.  If you venture into the backcountry (highly recommend it) they even supply bear poles to hang your food from--BYO rope though

You could always just bring some rope to tie your food etc. up in a tree away from your camping spot.   That's what DH and i did when we went through Yellowstone NP.  You may also want to call ahead, to the campgrounds or the Ranger station,  to see if they do have bear boxes at the campsites.
