training and nutrition

I am planning to do LeJOG (UK end to end) off road in May, 1200 miles over 3 weeks. I will be averaging about 50 miles and about 6500 ft ascent a day . I plan to travel light and stay at B&B's. I am wondering what training to do over the next 3 months. I am reasonably fit and do about 30 miles off road a week (though seem to have missed a few over the last couple of months), I have done 35 miles a day for a week, a couple of years ago. Any ideas on a training plan over the next 3 months. Also I will be in remote locations during the day so need to carry all food for each day, what do people recommend for eating during the day to keep energy levels up.

Ride as much as you can without losing perspective on life.
If you are overweight, even by a little, lose weight.

Neither of these are necessary, but both will make the tour easier. If you can only do one or the other, do the second.
