finding bikes to test drive

What bike shops in the Portland, Oregon are the best for finding tour bikes in stock to test drive? I'm especially interested in the Trek 520, Surly LHT, and Salsa Vaya 2. I live a couple hours away and am not familiar with the shops there but am hoping the "big city" will have more stock than where I live.

City Bikes is a local bike co-op that has Long Haul Truckers in stock. They are on SE Ankeny, which happens to be a nice bikeway to give bikes a spin.

Universal Cycles is just up the street from there, which is another bike shop I'd recommend. They are more mail-order and tend not to stock as much stuff in store though, but still worth checking out. They have Salsa and Surly gear.

Also nearby is River City Cycles, which is known to be more for Spandex road weenies but they do have some select touring stuff.

I understand your wanting a test ride but realize that all of the bikes you mention are so similar in geometry and weight that I doubt you would notice any difference if they were fitted with the same saddles and handlebars.  So choosing based on availability, price, stock components and dealer assistance is just as good.  Any good dealer will let you "customize" your bike by swapping stems, etc. to make it fit you better no matter what name is on the downtube.
