Bikepacking Routes for December?

I'm wanting to take a week long bikepacking trip the first part of December of this year.  I'm considering the southern portion of the Sierra Cascades, but am not sure how this area would be during that time of year? I should note that super cold weather bike packing isn't an option at this point.  I simply don't have the gear to deal with those types of winter extremes at this point.

I'm looking to camp and would like to stick to dirt, if possible.  I don't mind a bit of road at all though.

Where would be a good week long trip for that time of year?

I'm currently in Dallas.  I've considered Big Bend, but I'm just not sure about the safety of the area.

Any thoughts would be greatly appreciated!

I have heard that there is some good mountain biking in northwest Arkansas. I don't know of any resources so you'll have to search around to see what you can find.
