Dirt touring handlebar setup

I'm rebuilding an old stumpjumper into an all around off road bike with touring capabilities. I'd like to retain the original suntour components, which is leading me to want a stem/bar combination that keeps me mostly upright but with a lot of control for technical climbing. And, of course, style is a concern... So I think I'm looking for the widest Bullhorn bars I can find. Thoughts?

An uphill, against the wind fight.  What's so special about them that newer, better performing components shouldn't be used?   Sun Tour (the REAL Sun Tour, not the current name owner) was a good manufacturer but they have been out of business for many years.

The bike is close to thirty years old, and the components are still performing well, so why replace them if they will work on new set of more comfortable handlebars?

I put On One Midge bars on  CX bike.
These have flared drops, though i'd like the drops to be a little longer. Very comfortable and good control off road for a drop bar.

I was also thinking of the salsa bars. Have one on my own bike and like it lot.

I am not sure what you mean by bullhorn bars, but if you want traditional road bars...

I like Woodchipper  bars, but the clamp diameter is 31.8mm, and that might make it hard for you to use.

The Nitto Randonneur has a 25.4 mm clamp diameter.
