Child friendly tours in the USA

my wife and i have done quite a bit of bike touring, but only done overnight trips since we had our 2 1/2 years old child. we think she is ready to do a longer trip with us and i've had a tough time finding good tour routes. we plan to camp and use warmshowers as much as we can. we have a weehoo tag along that we plan to pull her with as well as her strider bike for when she is up to riding. so a route that has a good amount of bike trail would be great. we were thinking of doing the GAP and C&O, or maybe the Mohawk river valley trail. route suggestions? we live in North Florida, so east coast would be easiest, but we are open to anywhere.
