Monterey to San Luis Osipo

I live in Colorado. I'm thinking of flying to California and biking from Monterey to San Luis Osipo, probably in 2026 once the road reopens. Then I'll Amtrak to San Diego. Can anyone tell me :

 * If I need to reserve hiker/biker camp sites? Or state park ones?
 * Is water pretty available along the route? Do I need to plan on filtering/boiling water?
 * Should I send my bike with FedEx/UPS or take it on the plane with me?

...or anything else I should be considering. Thanks!

No need to reserve. Just show up. Plenty of water along the way. No opinion on shipping vs flying with the bike. Either way it’s a pain.
