I'm wondering what difficulties vegetarians have had finding decent food along the way.  I've found that even on driving trips it can be hard to find decent veggie food.  I don't imagine finding BBQ tofu on a stick will be as easy in Kansas as it is in Eugene, Oregon.  I know some supermarkets now carry a decent variety of veggie foods, but I'm not sure if it's regional or not.  Is there tofu east of the Rockies?   ;)

Given the small towns that the ACA routes go through, you are frequently shopping at convience stores.  Selection is limited.  You probably should plan ahead and carry some dinners with you.

If you happen to live in California, Mendociono County is full of wonderful vegetarian places. My family went there on a vacation and found great places to eat. Mendocino County has lots of organic resaraunts as well.

OT-I'm very weird. I'm vegetarian most of the time, but I'll eat organic meat and stuff that's humanely raised. When I'm at scout camp I just tell people I'm vegan to keep everything simple.

I'm not sure how plentiful they are East of the Rockies, but the Trader Joe's stores usually stock a good selection of vegie and organic foods at reasonable prices.  They've got a web site that will give locations.

There is Tofu east of the Rockies, but finding it will add miles to your trip each day. Having done a crosscounty driving vacation with a vegatarian I must say we had to make several adjustments to our itenary. I would look up vegatarian reaturants in major cities along the route, and ask what types of markets and other resources there are in the area (at least that's the way we handled the situation – it took a lot of research even with google).

I live in central Kansas, had a vegetarian student living in our household for several years and know a number of other vegetarians in our small town.  No, you aren't likely to find BBQ tofu on a stick, but you will find tofu in the grocery stores.  But actually who needs tofu.  You will find plenty of healthy, wholesome non-meat foods anywhere you go.  You may miss your particular style of vegetarianism, but you won't be malnourished.

You really should be fine as long as you're not at a Girl Scout camp. Girl Scout usually have vegetarian options, but they are limited. My diet is so strict that the last time I went to camp, I lived off of lettuce, tomato, a few other kinds of raw veggies and fruits, and some plain lays potato chips for a whole week. The salad dressing had high fructose corn syrup and everything else had hydrogenated oil, rbst, or other stuff. This year I'm wary of the tomatoes, corn, and lettuce because of genetic modification. Supermarkets always have something edible.
