It is certainly posible to stay every night in a hotel or motel as you cross the country.  In addition to the Adventure Cycling maps that show you the motels, there are many organized tours that follow different routes and stay at motels.  When in doubt, look around interstate exits for motels.  There are so few hostels it's generally not worth searching for them.  How many miles per day do you expect to ride and what route are you looking at?

It's definitely possible; I did it (quite a few years ago). You'll have to go more towards main roads than AC routes usually are, though.

I read a book about called Cycling Across North America by Lue & Shannon Christian. They are a retired couple who tandemed their way from San Francisco, CA to Quebec City Quebec by staying in motels or with biker friendly people every night.  The book was inspirational to me as they detailed their route and their experiences. It helped motivate me to get busy and start building my endurance so I can do something similar.
