family Ak-S.Am tour - ideas?

Hi,
We are just deciding to sell out and cycle with our three small children next year.  We are thinking of promoting our trip as an awareness for and stand against food intolerances (celiac disease and allergies).  Since we are just in the idea stage, I thought I would stick this out here for any suggestions you all have for us. We toured a bit pre-kids and diagnosis, but havent hit the road recently.
Thanks in advance for any help with everything from gear to route, to promo, to the stuff we havent even thought of yet - !

Dear fellow bikers, go to crazyguyonabike and look up A Family Adventure. This family of 2 adults and 2 young boys are taking a year long  bike tour around the US and are wintering in Baja Mexico. Read jounal and see pictures as they ride along.
