I've been around this country on a motorcycle.  From SR 139 Shasta is visible from the back side.  I'm sure there's some nice country in between.  The local bike clubs might provide you with some information

I have seen the lone cyclist going up the road that goes to Bunny Flats trailhead (I love that name!)...  It's a great climb with fantastic views.  I climbed Shasta last year which was a real fun climb with the best butt glissade I have ever done so far.

Hey, Badger:  I've done some road riding from Mt. Shasta up into the Klamath River country--very nice.  I know that US Forest Service roads encircle the mountain, so with the right maps you should have no problem circumnavigating the peak.  Good Forest Service maps will do the trick.  Also, for pavement rides check out this site:

Riding over to Etna and through that area is a special treat.  Have fun!
