Tandeming with 10 year old

My 10 year old son and I are currently training to cycle from San Fran to San Diego. I've done a bit a of reasearch especially in regard to safety. Our main concern at the moment is with the Big Sur. I'm wondering if we should consider an alternate route since the shoulders are nonexistant and the hills can be brutal. Or should we go for it? Any suggestions from experienced PCH riders would be appreciated!
