I'm getting my first touring bike soon and I'm interested in
hearing opinions on cantilevers vs. V-Brakes vs. disc brakes.

All are perfectly OK.  Discs are heavier, more complicated, more expensive, and reduce rack options, but are more effective in severely steep extremely muddy conditions and are more forgiving when a wheel is out of true.  Consensus is that cantilevers (including V brakes) are overall better suited for touring - and this is from a guy with disks!
