Tandem: Panniers or Trailer?

My wife and I will be riding a Co-Motion Speedster tandem around the western U.S. We plan to try both panniers and a trailer beforehand, but am interested in the wisdom of the forum.

Please let me know if you have any convincing arguments either way.

We will be fully-loaded, camping, and cooking almost all meals.

This is a frequent topic of discussion, with no wrong answers. In the upper right corner of this screen, you will find a 'search' button. I suggest you do three searches on 'trailer', 'pannier' and 'Bob'. You may also want to do a 4th search on 'tandem'.
