A minor additional consideration, which added rubber covers doesn't take care of, is stability when holding up a loaded bike at a stop. 

Very few tandem captains will wear road shoes, because of the risk of dropping the bike (and stoker) when stopped.  This is a more extreme case than a loaded single touring bike, but you're still steadying something that is much heavier than the single you ride unloaded around town or on races.  But you're unlikely to encounter conditions that slippery often.

True, although I do use road shoes with Look Delta cleats on our tandem too, and have never had an accident there.

Whatever the shoes that will fit you and give you comfort. But if I were you, I would love to continue using the Shimano road shoes. It will give you the right fit for whatever and wherever you ride.
