Safari bars question

Does anyone know of anybody who has swapped out the butterfly handlebars on the Novara Safari for drops? I am thinking it might be more versatile with drop bars, along the lines of the Co-Motion Pangea.

It's entirely possible. There's nothing unusual in the derailleur and brake spec that would cause concern. I don't see where the stem length or clamp diameter are listed, but, you'll need to consider those when swapping bars. Obviously, you'll need appropriate levers, shifters, bar wrap, and cabling for the new bar configuration, as well.
