Big Sky Montana to Driggs Idaho

I am wondering if there are motels to stay between Big Sky & West Yellowstone and West Yellowstone & Driggs Idaho?

Absolutely there are.
You can use the basic Google Maps and zoom in - then type "motel" - and locations will pop up.
Outside of Island Park, Idaho - they tend to be lodges.

A word of caution - many of these motels are closed in the off season.
During the peak season they are often booked full - plus the prices are pricey.

US191 south from Bozeman/Belgrade past Big Sky to West Yellowstone is one of the worst bicycling roads I have ever been over. It is a narrow, shoulderless, winding two lane road hemmed in by the river, stone wall and cliffs. It is heavily trafficked and full of impatient truck drivers. You couldn't pay me enough to ride it again. If you don't believe me phone a bicycle shop or two in Bozeman and ask them. Please pick another route.

I rode the ACA routes from Jackson, WY to Missoula, MT, and then north to Glacier National Park, and I had a great adventure.  I don't remember any roads being especially bad.  In my opinion, the national parks were not the most pleasant places to cycle.  They have narrow roads with lots of traffic, but I never fell in danger.  I'm a life long cyclist, so take that into account.

I camped the whole time, so I can't help you with motels.  Have a great ride!
